We recently hosted another fantastic session in our popular technique series, led by Sous Chef Tyler Russo. This exclusive hands-on class focused on preparing an elegant and flavorful dish: Poached Cod with Miso Sauce, complemented by scallion curls, fresh orange segments, a delicate sesame “coral” tuile, and tender asparagus.
Participants were guided step-by-step through the process of poaching a perfectly tender cod filet while exploring how to balance seasonal flavors and textures. The combination of the rich miso sauce with bright citrus and crunchy accents made for a memorable culinary experience.
